A warm, hearty meal featuring tender chicken breasts and baby potatoes, all cooked in a rich garlic Parmesan sauce.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 pound of baby potatoes, halved
- 1 cup of grated Parmesan cheese
- 4 cloves of garlic, minced
- 1 cup of chicken broth
- 2 teaspoons of Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the ingredients by rinsing and halving the baby potatoes. Place them at the bottom of your crockpot. Season the chicken breasts with salt, pepper, and Italian seasoning, and then lay them on top of the potatoes.
- Combine the minced garlic, chicken broth, and grated Parmesan cheese in a mixing bowl. Pour the mixture evenly over the chicken and potatoes in the crockpot.
- Cover your crockpot and set it to cook on low for about 360-420 minutes or on high for 180-240 minutes. The chicken should be tender and easily shredded.
- Shred the chicken in the crockpot and mix it with the potatoes and sauce. Top with fresh parsley before serving.
Notes
For best results, use quality chicken and adjust seasonings to taste. Add vegetables for extra nutrition.
