Ingredients
- 1 pound chicken breast, cut into bite-sized pieces
- 2 medium zucchinis, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste

Instructions
- Prepare the ingredients by washing and slicing the zucchini, bell pepper, and onion while dicing the chicken breast.
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Cook the diced chicken, seasoning it with salt and pepper, for 5-7 minutes until golden brown.
- Add the sliced zucchini, bell pepper, and onion to the skillet, cooking for another 5-7 minutes until the vegetables are tender yet crisp.
- Flavor it up by adding the minced garlic and ginger, followed by soy sauce, cooking for an additional 1-2 minutes.
- Serve the stir fry hot, garnished with sesame seeds and green onions if desired.
Notes
For a gluten-free option, substitute soy sauce with tamari or coconut aminos. To add spice, consider red pepper flakes or sriracha.
