Description

A warm and comforting Chicken and Rice Casserole perfect for chilly evenings, packed with flavor and simple to prepare.


Ingredients

  • 2 cups of cooked chicken, shredded
  • 1 cup of uncooked rice
  • 2 cups of chicken broth
  • 1 cup of cream of mushroom soup
  • 1 cup of mixed vegetables (like peas and carrots)
  • 1 medium onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup of shredded cheese (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked chicken, uncooked rice, chicken broth, cream of mushroom soup, mixed vegetables, diced onion, garlic powder, paprika, and season with salt and pepper in a large mixing bowl.
  3. Pour the mixture into a greased casserole dish, spreading it evenly.
  4. Sprinkle cheese over the top if using.
  5. Cover the dish with aluminum foil and place it in the preheated oven.
  6. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes or until the rice is tender and the top is golden brown.
